My Favorite Spring Salad with Avocado & Burrata
When spring arrives, I always start wanting lighter meals, fresh vegetables, and simple recipes that don’t take much time but still feel special. This salad is one of those meals I make again and again. It’s fresh, colorful, creamy, and perfect for days when you want something healthy but still delicious. I especially love adding avocado to salads. Besides being very tasty and creamy, avocado is full of healthy fats, vitamins, and nutrients that are good for the heart and skin. It also makes the salad more filling, so it can easily be a light lunch or dinner.

This combination with green lettuce, fresh paprika, burrata cheese, and aceto balsamico is simple, but the flavors work so well together.
Ingredients
Fresh green lettuce
1 ripe avocado
1 burrata cheese
1 fresh red paprika
Aceto balsamico glaze
Olive oil (optional)
Salt and pepper
How I make it
First, I wash the lettuce well and place it on a large plate. I like using big pieces because it makes the salad look more natural and fresh.
Then I cut the avocado into slices and add it on top. The avocado makes the salad soft and creamy, and it also adds healthy fats that keep you full longer.
Next, I chop the red paprika into small pieces for a little crunch and color. After that, I place the burrata in the center and gently open it so the creamy inside spreads over the salad.
To finish, I drizzle aceto balsamico on top. Sometimes I add a little olive oil, salt, and pepper, depending on the taste I want that day.
